Fresh Pumpkin Bread

We didn’t use canned pumpkin nor did we cook and puree a pumpkin ourselves.  We took a raw sugar pumpkin, cut it into quarters, peeled it, and grated it.  This method is very similar to zucchini bread, but only in method, not flavor.

This pumpkin bread definitely has a more mild flavor than regular pumpkin bread.  Those who don’t normally like pumpkin bread might give this one a try.

Ingredients
  • 2 cups sugar*
  • 1 cup oil*
  • 2 eggs
  • 2 cups sugar pumpkin, grated
  • 1 tsp vanilla*
  • 1 1/2 cups whole wheat flour*
  • 1 1/2 cups all-purpose flour*
  • 2 tsp pumpkin pie spice
  • 1 tsp salt*
  • 1 tsp baking soda*
  • 1 tsp baking powder*

Instructions
 
Mix together sugar, oil, eggs, pumpkin, and vanilla. Add remaining ingredients and mix until smooth. Pour into two greased loaf pans. Bake at 325 for 50-60 min. or until a toothpick inserted in center comes out clean.
